The Gaddis Home, built by William H. Gaddis and his wife Isabella in 1908, was one of the first residences on Cook Avenue. The family had come to Oak Lawn in 1893 looking for a larger yard where they could garden. Gaddis’s son, William B., would take an avid interest in politics and serve many years in Oak Lawn public office as Clerk (1912-1913), Trustee (1914-1916) and Mayor (1917-1920). Later William B. and his wife Lucille would leave Oak Lawn for more than a decade to live in Chicago. However in 1934 the couple returned to the Village, and moved into the house on Cook Avenue that his parents had built nearly thirty years before. After his return Gaddis would once again serve the community as a member of the Elementary Board of Education and as Village Clerk (1949-1952). Following his passing the home would be purchased by new owners and undergo various renovations. However it still retains much of its original style, and will always be connected to one of Oak Lawn’s most politically active residents.

I was invited by my rickshaw driver to his farmhouse which is located 3 hours by bus from Kathmandu and then 10 km by foot. The farm is in a cleared patch of a sort of jungle on a steep hill; it consists of the ground floor for a water buffalo, a cow and several goats. You reach the second floor through a steep ladder and you enter immediately into the cooking area shown in this picture.
The cooking is done on a clay stove fed by wood and always generating a lot of smoke which escapes from the window but fills also the two small adjoining rooms. Good clean water is available a 3 minutes walk away. There is electricity which consists of a single 20 watts bulb in each room. I had delicious napali meals there.

Notice the piece of hollow bambu in her hand which is used to activate the fire by blowing air in it.

The room was very dark and I had to use the highest ISO from my camera which produced a lot of noise.

Had two of my best friends to visit this summer. We went wild camping for a night a few miles from my house. We cooked using this massive old aluminium roasting tin that ended up buckling over the fire. It worked a treat though. We cover the fire remnants with slate before going to bed....in the morning there were still hot embers, bit more fuel and wood and we were ready for breakfast. Yum.

Notes: This may sound funny, but eyes closed, this dish could have been mistaken for bbq baked beans. The morcilla (blood sausage) could have been your frankfurters, garbanzo beans are you beans. The tripe, of course, is the only difference. This dish was more sweet-tasting than I had expected. I can't emphasize how much it tasted like bbq baked beans - smoky, sweet, and warm and the sauce was the right consistency. Excellent.

The morcilla were a little dried out, but had a very nice ferric blood sausage taste. Some of the chickpeas were a little under-cooked, but somehow, I didn't mind - it added to the dish's rusticity. The tripe was tender and moist.

I can't say this is my favorite tripe presentation, but it was interesting and something different.
