I was invited by my rickshaw driver to his farmhouse which is located 3 hours by bus from Kathmandu and then 10 km by foot. The farm is in a cleared patch of a sort of jungle on a steep hill; it consists of the ground floor for a water buffalo, a cow and several goats. You reach the second floor through a steep ladder and you enter immediately into the cooking area shown in this picture.
The cooking is done on a clay stove fed by wood and always generating a lot of smoke which escapes from the window but fills also the two small adjoining rooms. Good clean water is available a 3 minutes walk away. There is electricity which consists of a single 20 watts bulb in each room. I had delicious napali meals there.

Notice the piece of hollow bambu in her hand which is used to activate the fire by blowing air in it.

The room was very dark and I had to use the highest ISO from my camera which produced a lot of noise.

Had two of my best friends to visit this summer. We went wild camping for a night a few miles from my house. We cooked using this massive old aluminium roasting tin that ended up buckling over the fire. It worked a treat though. We cover the fire remnants with slate before going to bed....in the morning there were still hot embers, bit more fuel and wood and we were ready for breakfast. Yum.

During our "passion fruit" course crimson coloured polymer cooking boxes with smoked paprika scattered on their surface, were brought to our table and left to sit there. We were instructed not to touch the boxes as they were heated to 450F and that there was something cooking inside.
A concaved bowl was brought to our table with an opposing set of spoon and fork, On the fork was a chanterelle mushroom lifted away from the pool of grilled eggplant puree with bacon flavour. The Hawaiian sea bass that was to accompany this dish was hidden within the boxes brought to our table two courses earlier, and had been steaming over citrus water. My companions raved about how these flavours worked wonders with the wine they had paired with this course (the smoky Fox Valley Winery, RESERVE, Chambourcin, IL 2004) however, without the wine, I found this course forgettable.

The nori was re-hydrated and spread with a sesame grilling sauce and then tightly wrapped around the fish and baked.For the shiitake and oyster Napoleon, I steamed the mushrooms and dried them. Then sauteed some red & green pepper and diced a large Pacific oyster. Using a canape cutter I cut the mushrooms round and using the cutter to form, and cook it I placed 1 mushroom on the bottom, then some peppers and then 1/3 of the oyster and repeated 3 times also baked. For the blonde asparagus I cut down the stem in 3 places and braided them and they were tied with scallion slivers and spread with tamarind paste and were also baked.

Ingredients for 4 servings:
4 veal cutlets (about 1 pound)
3 cups tomato sauce (homemade is always best, but Muir Glen makes good stuff too)
1/3 cup parmesan cheese
1 egg
1 cup mozzarella cheese
1-2 slices whole grain or low-carb bread (for crumbs)
1/4 cup olive oil
garlic and onion powder
basil and oregano
salt and pepper

First make bread crumbs by baking the bread slice(s) in a low temperature oven until crispy (or use 1/4 cup premade bread crumbs). Mix with herbs, garlic powder, onion powder, salt, pepper and parmesan cheese.

Pound each cutlet with a heavy wooden mallet. Dip each piece of meat into the beaten egg, then coat cutlet in bread crumb and cheese mixture. Heat oil in a large skillet and brown both sides of the cutlets.

Pour a little tomato sauce in the bottom of a 13"x9" baking pan, and put the browned cutlets on top. Pour the remaining sauce over the top. Bake at 350° for about 20 minutes. Top with mozzarella and bake for 10 more minutes. Turn on the broiler for the last minute or two to make the cheese yummy and browned.

It's easy to do and probably better than the local Italian restaurant at a fraction of the cost, yum yum!

The way to a man's heart is in actual fact very straight forward.. (-:

Schnitzel and mash, paired with a top belgian beer... does the trick every time !

The meat pictured is a traditional german dish called Schnitzel. These are usually thin cutlets of veal - seasoned with salt, pepper and paprika. Then covered in flour and breadcrumbs and deep fried in a skillet. In this case beef cutlets were used and the use of pork is also fairly common. This stuff is to die for!

The mash potato is very simple - seasoned salt, pepper and chopped fresh parsley. A little creamed cheese stirred in, rounds it off.

The "Duvel" beer is a type of "Weissbier", which is light and effervescent, but also quite potent in this case.. ha-ha.. 8.5% alcohol.. Normally this beer is served in a much shorter and rounder glass with a tapered top.

Don't forget to eat with a very sharp knife! (Swiss preferred)

You don't want to ruin the crumbs while hacking away with a tired knife?!

A question I hear most nights is 'What's for tea?', closely followed by either 'do I like that?' or 'I'm not eating that!'.
Today we had butter bean tagine (with a few extra bits a la Janice), which Alex didn't want. I relented and said he could have baked beans and toast instead - the ONLY beans he will eat, however, they must not touch the toast.
I also baked some chocolate and m&m cookies, which were much more appreciated.
I thought I would include a few of my vast selection of cook books in the image too.

I like cooking. Very much :) I have several cooking books that are always by my side in the kitchen. But every day the most important question in my mind is... what to cook today? :) Pizza? Pasta? Soup? Stew? Steak? Or something else? OK, today will be pasta, tomorrow will be.... I don't know :) I'll think about it in the morning :)))
