Cooking In Water Bath
- setting a container in a pan of simmering water to keep it hot

Home Cooking Party at Rei's Part 2!
For dessert, we made up a sour cream cheesecake with a cinnamon graham crust, whipped cream icing and topped with sliced pears and a black cherry.
The texture of the cheesecake itselft is a bit rough and moist due to it not being set completely. (It was baked at 250 deg. F, in a hot water bath for an hour) Next time, I am probably going to bake it for an extra hour or so.

I like my steaks done to about 135°F, so that was the target temperature for the water.
(130°F = medium-rare, 140°F = medium)
(I started out at 140°F and it was down to 130°F after an hour, so keep that in mind if you try this out on your own).
